I have a two part question. First, I'm on 60mg/day of accutane in two doses. My breakfast and dinner times vary, so I was wondering if taking the medication between 8-10am and 6-8pm will cause a problem? Sometimes I only have about 8 hours between doses. Also, I eat a very high fiber diet (I'd say 50-65g a day). I read this can cause an issue with certain medications? Do you think this diet is ok with accutane?

I think it is fine for you to take Accutane (isotretinoin) within the times you have mentioned ... provided you have taken it with food. Try your best to spread the doses as far apart as possible ... but if you don't eat late at night then it is ok to take it earlier when you are eating.
If your diet consistently contains a high fiber diet then it should be fine ... as the amount of Accutane that will be absorbed would have been displayed in the effectiveness ..and your doctor would have altered the dose depending on the result.
In reality there is no interaction with Accutane and a high fiber diet.
