Vegetables are excellent sources of vitamins (especially vitamins A and C), minerals, and fiber.
Keep in mind that serving sizes for smaller children are smaller:
Two-ear olds
Cooked vegetables - 1 to 2 tablespoons
Three and four-ear olds
Cooked vegetables - 3 to 4 tablespoons (1/4 cup)
Raw vegetables - 1/4 to 1/2 cup
Salad - 1/4 to 1/2 cup
