Will carafate (sucralfate) show up on a drug screening? Is it addicting?

I can't imagine that it will. Sucralfate is not absorbed by the body. Instead it works it's action by coating the stomach and than being passed in the fecal matter in roughly 48 hours.

What little that is absorbed is just aluminum. This shouldn't cause a problem. Furthermore, it doesn't resemble any medications that would cause a probelm.

No it is not addicting. Again, it isn't absorbed by the body it just coats the GI tract. It is a schedule 6, meaning that there is no addiction potential.
